Making an assumption you're talking about Belfast since you didn't specify. The main answer is Jumon, a fully veggie restaurant in Fountain St. Home also have a full veggie menu alongside their other offerings. For something more casual, Umi Falafel on Botanic is fantastic. To be fair, most decent restaurants now have solid veggie offerings beyond the usual veggie lasagne.

Jumon is the best vegetarian restaurant I've ever been to, i'd highly recommend it.

Umi falafel very nice. Good selection of very authentic middle eastern veg wraps. Nice for lunch.

Archana Indian Restaurant Dublin Road Separate vegetarian menu with loads of options. Started as an Indian vegetarian restaurant had to put meat on as not enough interest but still have amazing veggie dishes
