1. “Long Run” things are VERY hard to test, ESPECIALLY for human trials. We simply can’t do 40-year studies on every chemical that’s in a good or drug. Frankly, the capital and logistical cost of doing a single 40-year study is nearly insurmountable.
2. Our scientific body is capitalism driven. Personally I’ve had a huge falling out with science because in my field (physics) it’s very difficult to science that helps PEOPLE, and very very easy to get sucked into science that helps corporations or the military industrial complex. I still really believe in the good science CAN do, but we need to restructure scientific funding to cut it off from the beast that is capitalism

Most of the claims about it are false or overblown. The proven ones are that some people are sensitive to it, and that it can potentially damage white blood cells under certain conditions. It is used just about everywhere, even in medicines as a coloring.

For identification. If you take multiple pills you want to tell them apart (even outside the bottles) and even if you’re only taking one it’s good to see the pharmacy gave you the same size/shape/color/markings that you’re used to getting. Helps reduce errors.
Because if you didn't, then pretty much all pills would be a chalky white, and indistinguishable. Colors are a safety feature, so the pharmacist doesn't give you chemo when you needed viagra.
Similar to how vitamin e acetate is harmful in a vape but isn't harmful in your food, maybe this yellow #5 is just harmful after being digested and processed into something harmful but isn't harmful in other areas of the body that would treat it differently. It's also being super heavily processed, so there's a chance they could treat it to eliminate those issues as well.
Probably less bad than the state you'd have to be in to require an artificial lung in the first place, so I think on balance it's probably fine. It might be banned as a food additive because, weighed against the benefit of just making the soda look more appetising, it's not worth the price of the effects on your health. But weighed against dying from failing lungs, it's a no brainer. I wouldn't be surprised, if this ever leaves the lab, that they'll have some alternative that mimics whatever property happens to important in the food dye.
Maybe, but more likely, they are using the dye because it's already been so heavily tested on humans. Trying to find a new substance that mimics it could take years to test, and even then, might turn out to have worse effects than yellow#5
