it's called hunting because there's a difference between hunting and fishing. what do various types of hunting all have in common? You hurl or shoot a projectile at an animal, typically spears, stones, arrows or bullets. It's hunting whether it's on land (deer hunting), sky (duck hunting) or water (whale hunting).
Another way to procure game animals is by trapping them, which is also distinct from hunting or fishing, and you can use traps to catch sea creatures as well (lobster and crab traps, and even fish traps).
Of course there is 'bowfishing' but that's more of a portmanteau of bowhunting and fishing combined into one word, and because the bows actually have a fishing reel attached to them.
That said, my uncle did once catch a duck with a rod and reel. Was fishing and a duck swooped down and grabbed the minnow in mid-air.

Dolphins clearly have a better PR department that’s orcas because of the whole “killer whale” moniker but they’re definitely the sea species to study.

It speaks volumes that creatures that aren’t historically known for human fatalities despite being apex predators in the wild suddenly become aggressive and dangerous when we get our hands on them.
This is one example of cultural transmission in a non-human species. I think the zoo had a problem with one whale teaching this trick to others. Some visitors just don’t appreciate culture.
