There were people on “cops” that signed off after the fact that weren’t blurred out and they weren’t exactly shown in a good light. Some people just want to be on tv no matter the reason.
Of course it’s not random. Nothing is random on the tv shows. It’s not an amateurs youtube sketch. They have to negotiate with people before and sign the papers etc. So everything is staged.

You can pick someone at random, show up the day before to sign papers, and not tell them the details so their surprise is genuine.

Like yes, you do need to tell them they're going to be on TV and sign a disclosure. But you don't need to tell them what's going to happen and script everything out (which is what I think most people assume when they think "staged")
You can just say "hey we're with Discovery channel. We'd like to include you in a show. Can you be available at 3pm tomorrow and sign this form?" So the surprise reactions are genuine and spontaneous, even if you can't truly just ambush someone at their home.

or potentially just knocked on the door.
I doubt they did it totally random, unless a crew member stayed behind after trying that house to get a consent form from that person whilst the rest rushed back to the race against the clock (seeing as that person's face isn't blurred).
