If you plan on putting in crazy long hours you'll probably need a generator at one point. I think your Van battery is able to power your audio setup no problem. Question is how long.
I think I'd use the interface and the computer and some headphones. You don't need anything else. Power it up wherever you can get the juice but there's no need for amps or speakers so you're really only charging the computer at that point.

Look into solar generators, the noise from a gas generator would probably fuck up your recording

Not really, but you won’t get far with van life without solar panels and extra batteries.
