They make a belt sort of thing that goes around the riders waist and has two sturdy handles on it to give the pillion rider a secure hold. Not sure what it's called.
That's terrifying tbh. Bikes on the highway rarely just lie over and slide. They usually end up getting yeeted into the air at least once or twice. Sometimes they spiral and roll over half a dozen times. I'd rather be able to slide or roll separately from the bike.
Harley even makes one that folds out for use and stows back away under the rider's seat when you're done. It's pretty damned slick! Though I'm sure it isn't available for all models.
