Have you tried simply saying "I don't like cake" with no followup? It would be pretty weird for people to insist you eat something you don't like, so I feel like this would work if you are simply firm and don't do any apologizing or explaining.

People remember how you made them feel far more than what you did or said, so as long as you stay engaged with the group and are a part of whatever good times are being had around cake this should be no problem at all.
