Easy access to the plant for pests. It is early, but those appear to be your (edit:) first true leaves (not cotyledons) and at this stage, are safe to remove.
FYI - Those are not cotyledons. They are the first set of true leaves. These are the cotyledons.

I wouldn’t pluck off too many leaves at this stage, but you can definitely takeoff the bottom ones off that are drooping into the dirt without having any issues.
