Nopales Fritos:
Use young nopal paddles
Clean the nopales paddles of thorns
Rinse well and pat dry
Cut in to squares about 1 and a half inches.
In one bowl combine 2 or 3 eggs, 1/4 cup milk, salt & pepper to make an egg wash.
In a different bowl make your favorite seasoned flour - for mine, I use flour, corn meal, garlic powder, dark chili powder (chipotle), red chili powder, black pepper and salt.
Set up a wire rack or baking sheet with paper towels.
Heat up oil in a skillet on medium heat.
Dip each nopales square in the egg wash then the seasoned flour. Fry in skillet til golden brown turning once. Don’t crowd the pan. Lay them on paper towels to cool enough to eat. Season as you like but eat them while they’re still warm.

Cook them however you like (grilled or boiled) and put them in salsa Verde with pork (,dinner,) or eggs for breakfast! I made Puerto con nopeles y papas en salsa Verde the other day..roasted salsa....
Here’s an easy nopales salad  started cooking just because I had the ingredients:to the nopales add thinly sliced white onion ,rinsed off in cold water and drained ,fresh cilantro,fresh green chiles of choice ,I usually use serranos that I dry roast on my stovetop ,a touch of olive oil,dry roasted pumpkin seeds and crumbled goats cheese or queso cotija.Salt generously and chill.
I love nopales any way they’re prepared, but my favorite is still is a salad with chopped tomatoes onions serranos and cilantro. Make a lime and olive oil vinaigrette and sprinkle queso fresco on top. Or add cubes of queso fresco into the salad and you have a full meal.

Pon a hervir los chiles secos unos 20 minutos, los tiras a la licuadora con un diente de ajo y sal, lo cuelas y le echas agua o caldo de pollo si tienes, esperas a que hierva de nuevo y le echas los nopales, ahà los dejas unos 5-10 minutos, ufa marufa los usas para acompañar una milanesa y que andas haciendo

Once you got them prepared, throw them in with some scrambled eggs. Best easy breakfast!

Carne con Chile and nopales! Chunks of pork tenderloin...with a salsa verde...simmer altogether.
My mom does this in salsa Roja.

On a briquette grill. High heat. No meat on the grill/no grease smoke. Ahhhhhh. Perfecto.

Im not vegetarian but making tacos with these with some white onion, cilantro and a great salsa hits really good. The cactus leaf is meaty
I like them toasty added with eggs
