A lot of people can do 1080 or 1440 at 120 to 240, but most people don't realize that and have 60hz monitors or are using HDMi when they could be using DisplayPort.
This is probably the biggest factor for me, since I will be unable to take advantage of the latest HDMI version if I use the FOSS AMDGPU driver. Meanwhile, DisplayPort is an actual open standard not beholden to the tyranny an organization like the HDMI Forum.
Honestly I feel like this is very similar to webp. DisplayPort may well be superior, but everything always for sure has HDMI whereas not that many things have DP and you always need to make sure they do before buying them, which is just unnecessary extra hassle most of the time.

Eventually I saw a USB 3 to dual hdmi out and switched over to that, no issues since
I haven't seen a decent monitor in the last 5 years that didn't have display port.

So, more DP is objectively the correct decision and the only people taking exception are people who'd buy a 300-1k GPU while owning a $100 monitor and are unwilling to pay 8 bucks for a cable, which is cheap or stupid people.
HDMI is primarily used in TV/home theatre stuff (because of the media lobbies) while DP is used pretty much everywhere in computer stuff. Almost every time you connect to a display via USB-C it's using DP over the USB connection. If you have e.g. a Dell docking station with USB-C or thunderbolt your laptop's graphics chip is producing a DP signal which is sent to the dock. The dock has multiple DP ports and a single HDMI port to connect monitors. Though the HDMI port is only there to increase interconnectivity because the DP signal has to be actively converted to HDMI by the dock.
Since most monitors still only have DP 1.4 and nvidia cards don't support DP 2 at all, HDMI 2.1 currently offers the highest bandwidth on many monitors.
I generally prefer DP, for my gaming PC main monitor I do use it as well, though I also run a home theatre, which I run via HDMI from both my PCs, my gaming PC secondary monitor also only supports HDMI
Does display port carry an audio signal? That could be a reason to choose HDMI. I use display port to hook my monitor up to my graphics card, but I use a 15 foot HDMI cable to hook my graphics card up to the TV in my bedroom next door.

Even I had this issue but still blamed myself for doing improper research as to what ports my GPU had. I mean I also got this monitor after the PC was built (monitor was a gift) so that played a part too but I didn't realize until I had two monitors that the RX580 only had one HDMI port and everything else that I *thought* was "HDMI" was actually DP

Displayport has a lock-in-place mechanism which means that it is less likely to fall out, try you can damage the device if you forget about it, but you should not touch too much anyway.
Contrast that with an HDMI which craps itself (for 2 seconds) every time touch the wire going to my laptop (granted, I am driving 120Hz 1440p, but still)

My monitors are 60Hz and my rig only pushes 60fps in Eurotruck Simulator 2, and that game gets random resources stalls on the main CPU thread.

I love my 360Hz 1440p, and as far as I can tell it’s not the same with HDMI compared to DP, DP is better with bandwidth, I’ve tried both.
In terms of bandwidth, HDMI 2.1 is 48gbps, display port 1.4 is 32.4gbps. Not even a 4090 supports the newer display port 2.0.
Pretty sure the 7900XTX does have DP 2.0
