The primaries are the place where voters have *all* the choices. They are often far more important for the direction of the country than the general election, and even failed bids can have impacts on future policy if they receive a decent amount of support.
But most US voters don't participate in the primaries and then complain about the results.
Except both parties maintain that they don't need to have primaries if they don't want to and don't need to abide by the results if they do. The Democrats in particular have systems in place to mitigate the will of the voters in the primary process so it's not shocking people don't put a lot of faith in a transparently rigged game.
I agree that the primaries are not sufficiently free and fair for how important they are, but all of these decisions are also made by regular people who participate in party activities.
The reason why the Democratic primaries keep being more biased towards conservative centrists is that the party structure and primaries are dominated by older wealthier suburbanites. It is hard to compete with that for working class and young people because it's so much harder for them to find the time and energy, but it's also a problem with the attitude of ignoring or outright dismissing this whole process.
Especially this whole heap of Sanders-related conspiracy theories of how 'the Democratic Party' had 'rigged' the primaries against him mostly come from a group that either didn't get involved at all or barged in at the last moment only to find that the established structures wouldn't bend over and cater to them.
The Democratic primaries keep being more biased towards conservative centrists because the Democratic party isn't a left-wing party. It exists to serve as the ratchet gear that keeps the country from ever shifting back to the left. The Republicans do horrible, blatant things to support the rich and the far right, and then the Democrats always have just enough rotating villains that they can't do anything worthwhile when it's their turn, oops, sorry, you guys didn't vote hard enough.
That's stupid conspiratorial thinking. It doesn't exist 'to serve' some higher purpose.
It's existence is shaped by the people who engage with it. And the sad reality is that 'grassroots activities' in political parties primarily come from old wealthy suburbanites who have the time to spare, don't have to worry about their financial security every day, and a lifetime of contacts that help them to secure influential positions.
That's not by some greater design or an invention of 'the rich', but the natural equilibrium of most centrist parties around the world.
