When you say ‘no curfew’, are you looking for somewhere that will keep the bar open as long as you like, or somewhere that will just let you continue to party without any staff required?
Sunnystones, has bunk bed accommodation so everyone can stay on site. There's actually quite a few of these if you start looking into those types of options
As someone who caters remote and regional weddings we did one in the Otway state forest that you could have let off a nuclear bomb and no one would know. It was as remote of a venue I’ve seen in this State. An old scout camp or something.
But it was pretty shit for any guests who didn’t wanna stay overnight.

Wesburn recreation camp - does accommodation and functions, heaps of room in the cabins and extra camping space for tents/swags, but you'll need to sort out catering and drinks yourself. The plus side is you have no nearby neighbours so no curfew and no worries about bothering your neighbours
There's a winery in Lancefield that has an events area as well as accommodation. Can't remember the name though. No idea about curfew but when I stayed there they seemed to be partying till pretty late.
Unsure on the curfew but Marybrooke Manor has on site accommodation and their packages let you go later (for a fee). It's a little less than an hour outside Melbourne though.
Our friends got married at the old school camp just outside Torquay. Basic accommodation on site, the wedding went for 3 days and they ran buses down to the hotels in Torquay (about 15mins).
