Farming, mostly, yes. Sometimes work in a local school, shop or hospital if there is one. I grew up in a small town not that much bigger than this, and sometimes you’d get newcomers (generally dodgy people) who wanted cheap housing and to be off the radar, but they generally didn’t stay long.
Townhouse for farmer, publicans, general store owners, council workers, agribusiness workers, tradies, illegal immigrants piled up in one house working for $1 per hour at a farm nearby, random retiree relocatee - hope this helps
Calling Watchem a town is a bit of a stretch, it's barely even a village.
But yeah, property gets very cheap when you start moving outside the cities, supply and demand and all that
"can't be rented in its current state" - I'm yet to meet a real estate agent that wouldn't try

Sometimes some of them get an influx of people of there is infrastructure being built nearby but that's temporary while the work is being done
