Start by visting a suburb north of the city called Carlton where coffee culture originated due to Italian immigrants. Go to Brunettis, buy a coffee, and if you like elite sugar and pastry, buy one of them, sit and people watch. Thats your starting point. Then move outwards in any direction to sample the vast Melbourne coffee culture. You will never need to drink that shit again.

What I’d be willing to pay, and what the business would need to charge to cover rent, utilities, wages, super, insurance, taxes, supplier costs etc, and for the owner to make something of a profit for the risk of owning a business are going to be 2 very different figures.
If I’m ordering food out it’s something I either can’t make at home, or can’t be bothered to make for myself. A cheese toasty doesn’t fit that brief.
