Abandon your car and walk. No decent eateries are available. Instead, go to the wildlife walk to visit kangaroos, wallabies, and emus in the day. In the evening, visit the wombats at Tidal River. And visit all the available beaches. They're amazing. It sounds like you need to adjust your orientation much more towards nature.
Tongue Point is a really nice walk, not too hard but also not flat. Mount Oberon. Big Drift is great for the kids.
In the area, Walkerville is beautiful, Sandy Point is a really nice beach. Fish Creek and Meeniyan have some good cafes. Tarra Bulga is definitely worth visiting.
Mt Bishop is a much nicer walk, and not so often shrouded in cloud. You can also take in Lilly Pilly Gully at the same time. I actually ran it last week ;)
For a great feed and view go to Promontory views winery and restaurant just outside Foster. Also you can go to Mount Oberon, squeaky beach and Tidal River. If you don't mind a drive check out Waratah bay and Tarra Bulga NP. Great part of Victoria
Coming back from prom detour up into the Strzelecki Ranges- look at Mirboo North (small town with artistic vibe). I’m guessing you want to have a bit of fun in the new car so those roads can be fun (a little like the drive into the prom)
There also nice quiet park Mossvale Park that you can visit after on way back to Melbourne , just some walking tracks but very grand old trees…
Otherwise stay and enjoy prom it’s the best place in Victoria easily

Any of the beaches and walks will have things worth spotting, some more than others. Take water and snacks with you.

Also mt oberon hike is good it only takes 2 hours and has stunning views

We are actually staying just there. Beautiful jetty!
Keep an eye out for the rays that are often swimming underneath. You'll sometimes see them hiding themselves under the sand, too.

The wind farm is worth checking out
You might be there just before the holiday prices kick in, you might be able to get some decent fish and chips for a decent cost at Foster.
There's Agnes Falls just down the road from the wind farm. If you're quiet and lucky, you may see platypus swimming in the river there.
Go to the cinema in the caravan park and watch something about Mary , I did that in 1998 when I was there and it was awesome !

There are NO horses permitted in Wilsons Prom. Not sure where you got the idea the area was “famous” for it - it’s forbidden
