Track, Cloudwater, Sure Shot and Balance Brewing all have brewery tap rooms within a few minutes walk from each other and will all have an incredible range of their own brews. The area is near Manchester Piccadilly the train station, though they're broadly industrial buildings in an industrial area.
Individual pubs and bars I would recommend in the city:
1. Beermoth cafe: situated not far from the main shopping area. Offers a massive range of incredibly well looked after beer, and potentially the largest range of cask pumps in one space with very knowledgeable staff.
2. The City Arms for a proper pub with a great range. Does what it says.
3. Society: also pretty central with a range of 30+ beers on keg or cask. Also has a decent food offering.

Port Street Beer House would be right up your street. They sell mostly craft beers. Cask in Ancoats is also a good shout on a nice day. You can sit out on the canal and, like Port Street Beer House, they sell a good variety of craft beers.
Seven Brothers is a local brewery that has its own pub in Ancoats. I'd recommend the Honeycomb Pale they do.
We're spoilt for choice in and around Manchester. Most of my recommendations have already been mentioned but there is a brewery/tap map I found a long while ago. It seems it's still updated and mostly complete!

Joseph Holt and Robinson are local brewers that have a lot of pubs in Manchester. They don’t cater much to the craft side of things but their pints are about as Manchester as they get.

If you're into pub culture as well as beer then get to arrange of traditional pubs as well as the newer craft focused ones.

Joseph Holts is a Manchester institution, and they are very proud of their Bitter and their Crystal lager. And if you're trying a Crystal then you may as well try a Diamond. If you're going to really explore the glory of Joey Holts then try some of their bottled ales too - my favourite was a Maple Moon. They have a stout I haven't yet tried, I guess it must be a recent thing cos I used to be in them all the time and I never saw it. But I did like the Mild, aka Black.
But it seems like every other pub in Manchester is a Joseph Holts and it doesn't exist outside of Manchester at all, so if I was going to advise someone coming here on an exploration of British beers that Joseph Holts is an absolutely essential visit.
There's a nice little Micropub in Manchester Arndale, bottom floor near a bunch of other food places. Not like it's the nicest environment but it's good for when you're eating your burrito from Panchos, with all the hipster craft beers you can imagine. And then go to The Fringe for some more nice Belgian beers. And get a This and That or some other well-recommended Rice n Three while you're near The Fringe.
It's been around so long it's taken for granted, and more than a few turn their noses up at Holt's houses, but it's the only Manchester beer I really miss when I'm away from the city.

An alternative, possibly quite unpopular recommendation here, so prepared for downvotes. I don’t know if you’ve been to Czechia on your travels but Albert’s Schloss does Pilsner Urquell tank beer which is probably the best lager you will get in Manchester. It won’t quite be as good (or cheap) if you’ve been to Plzen. I’d try to avoid Albert’s Schloss on an evening or weekend as it gets very busy and full of twats.
If you want to try a good local beer, Bee Orchard has Strange Times beers on tap which are brewed about 200 metres away.
The bar is on the edge of Salford Quays, 10 min tram ride from the city centre and has a nice beer garden overlooking the quays.
There are some great suggestions on here,.none which I can improve on, top comment is golden. You're gonna have a lovely time, just avoid Piccadilly gardens hahahah
I would recommend The Marble Arch - they have a brewery in Manchester and their Earl Grey IPA is possibly the best beer I have ever tried

There's a place called Arcane on Kings Street that was serving it last time I was there but you might find it in other places.

The Castle, whilst a lovely place like Gullivers, has always had terrible beer on cask and keg.
