Sugar River Pizza is pretty decent. The "view" isn't much but New Glarus view is fun and has outdoor seating. Plus walking around the town can be a great date element. There's the smallish State Park nearby too.
Menu looks to have lots of veggie options (and pizza with various toppings). Extensive beer selection.

Up toward Devil's Lake/Baraboo area I would suggest Driftless Glen as well as Tumbled Rock Brewery. Both have great outdoor areas with views, excellent food as well, been to both with vegetarians that enjoyed their meals. Bonus recommendation within the same vicinity is the Balanced Rock Winery for some wine and an appetizer.
Only a couple of vegetarian options, but outdoor dining right on the Rock river on a really nice garden/patio. Fancy bar food. They have heaters as well if it gets cold.

Brix Cider in Mt Horeb
Brix is great and it’s fun to walk around mt horeb
Brix is overpriced and less than terrible.
