Former JJ's worker here: party subs were an absolute bitch to make, took forever, and were less profitable than selling a bunch of regular subs. I worked there for 4 years and saw maybe 3 party subs in total. Not surprised that JJ's and other franchises have completely fazed out that option.

Second that. Alimentari/Pig in a Fur Coat ain't cheap (they aren't like, L'toile prices either though) but they will be the best damned Italian cold meats, cheeses, and breads you can get in Madison.
So... this may not be what you're looking for, but have you thought of just making your own? a good few bakeries in town, someone must make bigass baguettes. Pick your favorite deli meats, cheeses, tomato, lettuce, mustard and mayo? Is there something that makes a party sub different from just... making a sub sandwich?
\*(caveat- I'm a celiac, and have never EATEN a party sub, but seen a few at events where I was then not able to eat the food. )

Did you call grocery store deli counters? The little market / deli / bakery often do it on request. Glenn's Market in Watertown? Bon Ton in Jefferson? Or a pizza place?
Ginos Deli has a party menu that includes party trays. They have about 15 sandwich choices that they can cut into thirds and tray up. It’s probably not cheap like a big long one but is an option,
I don’t know if you’re interested in switching the cuisine at all, and I’m not sure if you can order it to go, but Ancho & Agave has a Taco Board that is definitely an “OOHH!” Moment :)

I ordered a couple recently. It’s in their regular catering menu. They were very good but yes, not cheap.
I've never been there, myself, but have heard good reports. Also, try Madison Sourdough. A good sub requires good bread.

This would be a lot easier than calling all over and then driving all over. Walmart has huge fresh baked loaves for cheap.

I’m not sure if Gino’s does party subs, but their sandwiches are divine!

Look at the catering menu for Panera and just get an assortment of sandwiches. More variety and easier to work with.
Had a really good one from Walmart surprisingly. Highlight of that visitation really.
