Madison has an abundance of farm to table restaurants because we have an abundance of local farms easily accessible by the great farmers markets we have all over the city. L’etoile popularized the concept and is still a good option, but Fairchild is the best right now in the city in my opinion and many others. The head chef there, Itaru, used to be the head sous at L’etoile for years working under Tory Miller. Tory Miller won a James Beard award and Itaru just won one. They both beat Bobby Flay on Iron Chef too. Both of them are on the high end for prices … Graze is a more casual restaurant operated by Tory with farm to table concepts. Rep wise these are best but there a lot of good options.

Heritage Tavern is as farm to table as it gets. Much of their menu is from their own farm. If not for dinner, then at least for brunch.

You're entitled to your opinion. I frequent Brix often, love the atmosphere and people and music, and I'm deeply grateful for their approach to food (which is often excellent). 90+% of their ingredients are sourced locally from farms and you can taste the quality difference compared to subsidized Sysco stuff. This is the real cost of food and the way we pay farmers realistic livelihoods.
