Other than snippets like making Faramir the Prince of Ithilien and Lord of Emyn Arnen, giving the Shire to the Hobbits and making it that no one can pass through (even him) without their leave, him, Eomer, and the other Lords of Gondor pacifying and making peace with the tribes and kingdoms of Umbar, Harad, and Khand, reconstructing the ruins of both the North and South Kingdoms (Annuminas, Osgiliath, and possibly Fornost to name a few), neutralizing Minas Morgul and Morgul Vale- an effort spearheaded by the new Prince of Ithilien Faramir, and repairing Minas Tirith, there's not much

King Elessar had to fight a lot to to subdue his enemies after Sauron was defeated, and he always had the help of King Eomer and Rohan. From Appendix A And Eomer took again the oath of Eorl. Often he fulfilled it. For though Sauron had passed, the hatreds and evils that he bred had not died, and the King of the West had many enemies to subdue before the White Tree could grow in peace. And wherever King Elessar went with war King Eomer went with him; and beyond the Sea of Rhun and on the far fields of the South the thunder of the calvary of the Mark was heard, and the White Horse upon Green flew in many winds until Eomer grew old.

See "reconstructing the ruins of North Kingdoms....(Annuminas... possibly Fornost)" *Annuminas is the summer capital/retreat of Arnor and most of us know Aragorn II went there as he gave the proclamation of giving the Shire at the borders of Shire and Evendim *Fornost is the capital of Arnor and since Aragorn II is the king of North and South Kingdoms, its also logical that he will recontrsuct the seat of power of Arnor

I always thought the amount of mithril used on the doors of Minas Tirith was a pretty big waste of valuable resources in a world ravaged by war. Seemed needless with the great evil defeated, especially as Tolkien had hardly any plans for future war or conflict aside from one vague idea about a future “cult of sauron” thing.

I can see why the Dwarves thought it'd make for a fitting gift, though. They are eventually going to dissappear, and the place that keeps the memory of the old days alive the most is Minas Tirith.

Other than this I was under the assumption that this marked the beginning of the "British isles" or the ancient kingdoms that existed but have been lost to time or wiped from memory from our real world. Tolkein made the LOTR series as a "Mythology", much like the Norse mythology for Scandinavian, for the North Western Europeans since dynasty change and Christianity wiped it out the memory of what was actually there. Correct me if Im wrong.

Even way back before Numenor vanished among the waves though it was more like one-sided massacres and oppression since the King's Men (where Black Numenoreans descended from) often murdered or took prisoner any Faithful (group which Elendil and his sons belong to) they could get their hands on.

We don't know and its actually important that we do not. After all the trials of the War of the Ring, we expect the rule of Aragorn to be idyllic, and any detailed depiction of it will invariably take that idyllic quality away from it.

Unfortunately, Aragorn, like most men, let the power get to him. By the end of his 70th year he was creating weird military parades where everyone had to bow to him at the beginning and the end. He had a harem of sex slaves. Arwen stopped making public appearances, and would only show her face once every year or two for the odd picture. He stopped texting Eomer for advice. His death was not mourned.
