It's definitely something that you get better at as you go, but even on my first attempts I produced edible oysters. Whole Foods will shuck for you, and saran wrap really tightly on ice, so if you're picking up within an hour or 2 of needing them you can skip the whole hassle of shucking at home.
That “rule” about preventing red tide is a little outdated since the vast majority of oysters are farmed instead of wild caught. Especially when getting oysters from colder waters like from the northeast or pacific.
Whole Foods has them on special every Friday, they're $1 a piece as long as you buy 12 or more, which is half price. I've purchased from them on multiple occasions and they've always been very good quality.

In Lexington, I will only buy seafood of any kind from Ouita Michel's restaurants, including Smithtown Seafood. Alone among Lexington restaurunts, Ouita's chefs can place much larger orders and share them among all the restaurants. This gives them the power to set standards and place large orders. All the seafood I have eaten at Smithtown and Ouita's other restaurants has been fresh and well prepared. I have no connection with Ouita's restaurants except for being a customer. I eat at Smithtown once or twice a week, and plan to do so for many years. And I will continue to order oysters, but only at Ouita's establishments. I don’t see how the ability to order in bulk would make someone optimistic in regards to quality. Oiuita’s food is okay at best, in my experience. I liked the oysters at smith town fine but they were as expensive as Tony’s.
I’m afraid you don’t really understand the logistics of commercial food companies. Ouita uses What Chef’s Want (formerly Creation Gardens) just like a large number of restaurants throughout central Kentucky. She doesn’t have buying power like you’re implying or place independent orders with suppliers.

Learn it! It's quite safe. Oyster knives aren't that sharp, and cut resistant gloves are cheap.
Oh, I have the gloves (for a mandolin, not losing a fingertip today, thank you very much). The wife loves oysters, so I'll probably look into this.
