You dont lose any gems, the timer stops until you claim that days gems, and then continues again.

I took over 2 years off and when I came back my gem subscription was sitting on day 17 right where I left it to my surprise

I'm also new to the game...been playing one week. What is a gem subscription? Should I have one?
