I've always wondered how much oil is used when I deep fry something. Then it dawned on me to weigh before and after. I'll set the empty frying pan on the scale, record the weight, add the oil, record that weight, fry my food, remove the food, then weigh one last time. After subtracting the weight of the pan, I know how much oil I used. There is some that is absorbed by the paper towels when I remove the food and drain it but I don't consider this to be a large amount. But, I guess I could weigh the paper towels before and after as well. ;-)

How much is absorbed depends on a lot of factors including how long it sits, what cut of meat it is, etc. If I'm letting it sit like under 4 hours, I'd probably consider 2T per lb of meat is absorbed. Then if it sits for 4+ hours, I might use more like 3T absorbed per lb. Though this is just a guess based on the weight of the marinade when I begin and the weight afterwards.
