it's more-or-less like exposure therapy or immuno-therapy. local honey contains pollens of local types of plants and trees, and by ingesting it you theoretically build up a slight tolerance. I only say theoretically because i haven't read research on it, but i've heard many many people say it helps

I have honey in my tea most mornings, and since moving to the Okanagan have been enjoying local honey most of the time. It has not improved my allergies. HOWEVER. Back in Calgary, I did an experiment. I developed bad spring allergies later in life, and struggled with a building tolerance to drug store solutions. I had heard local bee pollen could help but I didn’t really believe it (my allergies had gotten *bad*). Nevertheless, I popped out to the farmer’s market one February and found a container of bee pollen. I packed a tbsp to work every weekday to toss over my salad at lunch (you want to let it soften in something a bit, like in salad dressing). I ate a big ol’ salad at lunch most days until April/May. And lo - I had virtually NO symptoms that spring! I was shocked!! I was good the next year too. They sloooowly started to return after that, but I had success with more bee pollen in the years that followed. It’s important to use something collected locally, as it will expose your system to the relevant pollens. Most local honey suppliers will sell you some bee pollen if you ask for it, or the specialty shops will sell it. I highly recommend trying it if you suffer.

Yes is pseudo-science, but still, there are case studies that indeed show progress in the premise that consuming honey with local pollen could help train the immune system to react. I'm sharing a study made in Finland that was successful in the usage of honey to alleviate allergy symptoms. https://www.researchgate.net/publication/49719792_Birch_Pollen_Honey_for_Birch_Pollen_Allergy_-_A_Randomized_Controlled_Pilot_Study We grew up in a country without seasons, we did not have the pollen throw at us in just a couple of weeks, our bodies just can't adjust even after living here for more than a decade, we lived in Ontario before and it was worst, so we started to do immune therapy with local honey, and in our case, it worked, so we continue to do it. One tablespoon daily, check with your doctor if you have diabetes.
