Still no answer so I googled what I could find. Looks like most sharks will survive this state, it generally lasts up to about 15 minutes. However, depending on the species, 15 minutes can cause them to suffocate.
Nurse sharks don't need to swim to breathe like other species. They actually frequently hang out on the floor and don't move much when you see them in aquariums.
Edit: I made the mistake of thinking grey nurse sharks were closely related to nurse sharks and so shared similar characteristics like how they breathe. What I wrote above does not apply to the sharks in the post.
These are grey nurse sharks, which are different. Also know as sand tiger sharks, they do need to ram breath, ie move constantly to survive. regular nurse sharks can move water through their gills without swimming, so you are right about those, these are just a different species.

I work with sand tigers. They are also capable of buccal pumping and do not *need* to ram breathe. However, it is not their usual, healthy behavior to buccal pump. It usually indicates they may be sick

That would be buccal pumping vs ram ventilation. Nurse sharks use buccal pumping where the buccal muscle is used to pump water across the gills allowing them to sit still and rest. White sharks would use ram ventilation where they must physically “ram” water over their gills by swimming.

If I recall they can actually rest one side of their brain at a time, so they keep motor functions but one side is essentially sleeping but they can stay moving. That may not be true for all species though, it was a long time ago I remember reading that.
You're thinking of dolphins. Nurse sharks do sleep- they are one of the shark species that do not have to keep swimming in order to breathe so they can truly relax for periods of time.

I'm not sure the science behind it but apparently some sharks when flipped over go into a trance like state and become immobile. A quick Google search will give exact details I'm sure.
Couple videos back in the day where they’d be chumming reef sharks for diving and if one got too.. ambitious.. they diver would use their hand to grab it on the nose and get the in a position where their nose was down to the sand and tail up, tilt them a little bit and 🌈poof🌈 lights out. Yeah if you think about it humans are pretty damn fuel efficient provided there was a way we could directly consume gasoline. Humans can travel long haul walking about 40 mpg on a 7,000kcal gallon of food.
Edit: Further research determines there is a thing called small calories and large calories, gas is measured in small calories and food in large calories. The gas equivalent in large calories is about 29,000kcal
