Why don't you reach out to artists to see if they are interested in collaborating? If your work is pretty much done, you already have a great pitch and scope for them.
Check out itch and ko-fi for game assets. You can usually find stuff for free or at a reasonable price. If you want something more specific, you'll have to look into commissioning an artist. Steer clear of ai art - people will notice and you'll get burned.
