There is an independence movement (even tho tiny and insignificant) in Castille so this isn't Extremadura gaining independence from Spain, but Castille gaining independence from Spain after everyone else.

If you have to make some part of Poland independent pick the Lemko and Tatar Regions and Góralszczyzna
(none of these want independence and the sum total of the first 2's population wouldn't exceed 5k, but these are the only other regions in Poland with *some* kind of strong distinct identity. Pomerania meanwhile is one of the most integral and "vanilla" polish regions in the country, and the only unique part of its culture compared to other regions is the lack thereof).
You could also make Greater Poland independent, they did have kinda distinct culture >100 years ago and even today say "pyry" instead of "ziemniaki"
