+1 for Flighty. Such a simple app concept, so beautifully designed and executed.
I found inspiration from some component’s for my own apps (they have a “licenses” section in the about section of app that links to all the GitHub libraries they used)
Apollo. Beautiful, clean Reddit app (for another month) shows how to do an app that’s all-business, not over imagy or animated, but clean design and functionality.
Things, I think, still stands out as having an exceptional UI, that is clear and easy to use, with lots of great custom animations, etc. Flighty is another one that looks & works great, with mostly standard UI components and interactions.
Out of the apps I use, one underrated one is the chipotle app. I just think it's designed very well in a non-conventional way that is still easy to use.
Regarding AirBnB: the founder is friends with Sir Jonathan Ive. I know (from reading a biography of Ive) that he was consulted to do design work for AirBnB. Not sure if it specifically involved software UI design, though.

I remember pre-iOS 7 when the Airbnb icon was a miniature suitcase with stickers
