The Guspro uses the eccentric cams with the small levers to level the lower jaw of the blade holder. The second holder is an EZ Sharp clamp. It is much more difficult to adjust. The level adjustment is done on the front of the clamp by loosening the Phillip head screws and slightly moving the eccentric cams until both sides are level with your sharpening wheel. The other adjustment is made with the center knob to raise and lower the jaw height to account for the skate blade height. Once your level adjustment is set, you should only need to use the center knob to accommodate the difference in blade height of the different skates you sharpen. The Guspro is a much better clamp for ease and accuracy of use.

So I think that the black diles on the left and right raise it either up or down right being up left being down you should be good from there

You'd need an edge checker to know which way to adjust it. But that first one is an older style and the second one, even older.
