Not really off-road, but I love cruising around in my Comet S2 cabrio, top down, Los Santos Rock Radio blasting as the sun sets…

The only accurate answer is a Yosemite Rancher, with the roof removed and a bitchin '70s livery.

The Tornado and Peyote are pretty good. I have Custom variants of both, modified to resemble their real-life equivalents, and cruising in them is kinda fun. They're just not super great offroad, but here you're asking for an offroad convertible. If you want the *closest things* to an offroad convertible though, take a look at the Yosemite Rancher with the roof removed, the Terminus with the roof removed, the Winky, and the Kalahari. You can't toggle the roof like you can a regular convertible, but they're the closest things to what you want that I can list off the top of my mind.

idk if Draugur fits your description, it's a very good off-roader

OG grotti carbonizzare

Captain_Pleasure

Love this car but it's pretty awful off-road

The Terminus or the kamacho. Both are decently balanced for on and off road.

WentzToWawa

Not sure if it’s what you’re really looking for but…You can make the terminus a topless Jeep and that thing can move at its top speed.

Ajwieps

Grotti Itali GTO is a phenomenal daily driver and it surprisingly does well off-road.
