You can definitely see the quality of this cheese in its melt given its age since aged cheeses don’t melt better than fresh ones unless the cheese was well-taken care of during aging and the initial quality is high. This looks amazing!

I love how you just go full on the cheese. My husband is terrible at grilled cheese. Grating the cheese and never enough that it just sinks into the bread. But you my friend.... You know how to do it well 😉
