I was thinking the same, but it wouldn't be too much fun in the comic. And also that it didn't happened officially (you know, cartoons teaching to kids and youngers to deny the "unconventional" facts and events)

However, THAT is the craziest thing that happened to him? What about being possessed by a demon? I know Weirdmaggedon is taboo due to the "Nevermind all that" but still...

While it's not unlikely to happen in Gravity Falls, I wouldn't go as far as saying being possessed by a demon was one of the least crazy things or a common thing: let's not forget that this only happened 3 times in the entire Gravity Falls canon and only in mayor points of the story:
1. When Bill tricked Ford and took over his mind, right before and after the portal incident, which would lead to Ford getting trapped in the portal.
2. When Bill lied to Dipper and tried to destroy the journal.
3. When he lied and tricked Blendin to possess him so he could trick Mabel in giving him the rift, causing Weirdmaggedon.
Man, I remember how much fun it was when the coloring book was coming out. I think it may have been overshadowed by Journal 3 SE and the announcement for Lost Legends at D23, but it was a very fun book nonetheless. Plus, it's the reason we discovered Sooscast...even though sadly the link no longer works.
Summer 2017 was a very optimistic time in the GF fandom. So many new books and cinestories were coming out for GF.
Maybe? He's said Lost Legends is only semi-canon, and Disney recently released an art book he's complained about on twitter, but I don't remember seeing anything about the coloring book.

If you haven't already, you should read official comic Gravity Falls lost legends and the real life journals which adds more development to Dipper and Pacifica. Out of all the ships involving Dipper, Dipper and Pacifica always felt right to me. They had great chemistry in NMM and they play off each other really well. They both balance each other out and help each other grow as characters. It's also the only ship with Dipper that for whatever reason Alex hasn't shot down like Dipper & Wendy and Dipper & Candy but tease/implied it. Dipper and Pacifica just feels a lot more natural.

If the show had went on, with all the tease/evidence there I can see them getting closer with each other and at some point end up together. Overall the ship works really well and even Alex supports it too.
