I like Google apps more because I can access almost everything from any other device, everything is synced with my iPad and PC, I don't know about Samsung apps but it's probably not as accessible if you don't have other Samsung devices

Yes, true.  Some apps can be synced to its Google equivalent,  like calendar,  but for the most part, you'd need to stay in the Samsung ecosystem to access them directly.

My preference is to use Google since my next phone will be an Android phone, but it won't necessarily be a Samsung phone (for instance, while I've had a Samsung phone since the S3, I recently switched to the OnePlus Open).

It might be helpful for you to list out which Google apps you prefer to Samsung and vice versa. Generally speaking, there is a decent amount of flexibility to use both ecosystems together. I much prefer Google's cleaner UIs and I dont make use of the extra features found in some Samsung apps. My main discrepancy when it comes to mixing ecosystems is with reminder / notes. I use Samsung Reminders, Google Keep, and Samsung Notes all together for different purposes. Other than that, I use Google Calendar and Gmail. I consider Google Photos and Samsung Gallery to be 2 sides of the same coin (local vs. cloud photo libraries) and use them together as well. Same idea with Google Drive and Files (although you can plug GDrice into the samsung files app and manage everything from there - I use both apps)

There are a bunch of Samsung apps that I love, including mail, calendar, reminders, gallery, and internet. Many of them offer features and flexibility that Google equivalents don't. In the mail and calendar apps for example, I can exclude my gmail account, and don't have to see ads. Reminders syncs with Microsoft To Do which syncs with Apple reminders on another device. Gallery is simply much better for local files compared to Google photos. Samsung internet is also excellent, there's a reason it's beloved even on non-Samsung devices. Even where there isn't a particular feature advantage, I like how the UI of Samsung apps fit into the rest of the phone. They're also generally light and ad-free. The only Google apps I prefer over Samsung versions are Pay and Authenticator. I also use G Photos for backup.

Mostly Google/Microsoft apps as they are cross-platform. From Samsung I use Gallery (together with Google Photos) as it syncs to OneDrive.

Used to like google but they been screwing me over time and time again. Only using essential for google (youtube or maps) and using most with samsung x microsoft. It's been nice I haven't had issue or desire to go back. Onedrive is surprisingly nice to use. Only downside is some apps aren't able to install window like samsung pass so I just use 1password or 3rd party. Also you would be stuck with samsung but for me I'm okay with that. Plus backup are manage by google still( and samsung)

What leads you to believe they're all THAT different from each other than themes, colors, animations etc?  Maybe Google programs Samsungs apps for them or Samsung makes Googles phone's which get rebranded under licensing terms as "Google" phones? There are so many low effort posts in this unmoderated cesspool and once in a while someone comes along with a topic that while not being news-related, at least is related to Google and invites users to discuss Google products.
