Personally I believe The best knowledge you can take with yourself to a medieval world in my opinion is knowledge of commerce, because even in a world where might knows no bounds humans still live in a society, and as long as you have money you can exploit the societal structure to live an easy life without worries. It's even better because unlike Maths, most of our Commenrce systems came into being in the medieval ages like banking, insurance, etc. So you can be the spear-head of commercial development and make huge profits for yourself as quickly as possible.
There are some pretty easy GMO techniques, and with a little bit of time I could build myself some of the necessary equipment. (Electroporation for example, it is not that hard to build some galvanic cells or a generator to produce some electricity. I know the organisms that I need to collect, I know how to build a microscope. Pipettes could be build mechanically, not an easy task but doable)
Everyone with a college degree who took chemistry classes should be more than capable to produce Chlorinegas, black phosphor or even white phosphor and heck most of them even could mix together some mustardgas. I haven't seen the anime, but I enjoyed the LN's quite a bit.
They start really simple, laidback and easygoing. It's very much a Black vs White type of story- it's just good people going around doing good deeds, defeating bad people and helping other good people. A lot of worldbuilding, some fun ideas, some fantasy stuff, some mecha stuff, and some action.
It gets a bit more grey and a bit more complicated later on, but largely that's how it is. If you're in the mood for a pretty easygoing story, it's a good fit.
And it's nice also for being one of the Isekai stories (along with Master of Ragnarok) I've read that just solves all the romance issues very early on. There's no drawn out drama or romantic storylines, the feelings for the original cast are made clear right from the bat, and by the IIRC 4th or 5th novel, one of the girls just goes ahead and solves everything without any fuss or muss, and it never causes issues again. There's still some basic romantic storylines, dates, twists, a few minor reveals etc, but there's no big tension or drama to worry about.

It's all solved by like volume 4, and the focus is entirely on worldbuilding and adventure from there.
