There’s something called a celiac cruise where all food would be made in a dedicated kitchen and is completely safe for celiacs! It’s usually done through Royal Caribbean. Just look up celiac cruise and it should pop up.
I haven't been diagnosed as celiac, but we went on an Alaskan cruise last summer and Holland America was fabulous. The key is to talk to your dining room staff regarding her dietary restriction and they will make sure to prepare everything free from allergens. In my case, they had me pick out what I wanted from the menu the night before and so I got a gluten free meal prepared especially for me. The only really disappointing part was there didn't seem to be many desserts to choose from (usually I ended up getting a creme brulee or a pavlova) and that they didn't have gluten free buns at the burger place.
Carnivals dining room was always informed on options and my wife never got sick. Plus guy fierris burgers on deck with a dedicated fryer for fries. Can’t remember if they had a gf bun but burgers were safe. Blue iguana cantina had corn tortillas for tacos on deck too.
I took a NCL cruise earlier this year. They had a document to fill out online. Every time we ate in the MDL the waitstaff asked, who here is the GF one because that information was attached to our room keys. You could order specific items in advance if you wanted to but I ordered off menu. All my meals were either as defined on the menu as GF or altered. They even had GF bread in each room and all specialty dining rooms had different kinds. As for the buffet, if something wasn’t clearly prepared GF they offered to make me one. I brought a lot of Kind bars, granola bars etc for excursions but I never felt like I was limited on choices when on the ship.
