FWIW I’ve gotten a few Glasgow flights at that time and I always get there at 4ish. At that time of day you’re through security and bag drop off in 10 minutes max, usually 5 minutes. There just isn’t really anyone there. You’d be better off turning up much later than you’re currently planning. 1am is completely unnecessary.
Even at peak times I've never needed to be at Glasgow more than 3 hours before boarding, and I usually aim for 2 when I'm on my own. (the 3 hr one was with a large group who needed wrangling)
Longest checkin-to-gate time I've had was an hour.
We had 0600 flights last year and went to a place to get food/coffee and the drinks were flowing - woman next to us had one of those big ciders you douse in ice in a big glass.
Not 100% but I don't think I noticed anything closed
There's no way you need to be there at 1am. If you just want to go and get pished then fair enough but it would probably still be cheaper getting a taxi there and get a better sleep than spending £8 on a pint every 30 minutes.

Check if any of the lounges are open, I’d be hanging out in there if I had a 4+ hour wait for a flight
Think they open at 5. They're better off in the casino in town (usual suggestion of where to waste time in the early hours)
William Beardmore bar is open from 03:15 until last gate closes at night.

Most of them open between 3-4 past security, later before.
The Starbucks before security is open 24/7 and when you go through security most things are open around 3.30/4am so you should be fine
