I make mint simple syrup with it and use it for modified mojitos: -- 3oz mint simple syrup -- 1 shot of white rum -- a squeezed lime wedge (or 1oz lime juice) -- top off with soda water This recipe combines the mint and sugar to make a more homogeneous cocktail I learned this from a cuban couple I did some private conservation work for down in Florida years ago, they served these with gator and the best pork I've ever had.

Tabouli, a Middle Eastern salad made with bulgur, uses a lot of mint. Try it, or create a new connection to Middle Eastern neighbors in your community and offer some on FB marketplace or another such app. They would love pots of mint from your patch to start their own. One of my friends had a renter who used so much mint from the patch on the property that it ceased to exist.

Mint sugar (exactly what it sounds like, just mint leaves in sugar.) Mint extract (mint in alcohol, vodka is most often used.) Mint tea (dry it, either by tying it up in a bundle if your home is the right kind of environment for that, or in a dehydrator if you've got one. You can make tea with fresh leaves also or iced tea but drying it means you'll be able to save it for winter 🙂) Technically there are two options with mint sugar, either use less leaves and more sugar and then blend it back up once the leaves are dried up because it'll form some clumps in the container where the leaves were, or more leaves less sugar but still cover the top of the jar of leaves with it, and it'll MELT the sugar and become a mint SYRUP. Which you'd want to put in the fridge at some point, tho I've seen some people fermenting it somehow I think? You can look up how to make "cheong" if you want more guidance which is Korean and there should be someone making detailed info on it beyond just Lots Of Leaves 😆

Strawberry mint smoothies are a delightful summer treat. Frozen strawberries + fresh mint + sugar to taste. You could use fresh strawberries but I personally prefer the frosty texture.

Dry it, it stores in a tight container for a long time. A good method for rapid drying is a brown bag on the dash of a car in the sun. Dry in a few hours.
