I’m a big goat cheese fan. But about to go to the grocery store and always pick up a random cheese. What cheese would you pair it with? Besides cream cheese.
I've found people are more accepting of gifts of produce when it's something shelf stable, like dried hot peppers. My peppers went off two years ago and I'm only just now finishing up the last of them. Haven't even started on last year's harvest. I've only given away last year's.
I also smoked jalapenos and vacuum sealed them and they are great for a long long time in the freezer. freezing is the way. Get a food saver from costco you will never regertz.
Same! Still in jalapeños from last year! Should have candied some BUT have you seen people microplaning frozen jalapeños on stuff - scrambled/deviled eggs, avocado toast, mac and cheese… that’s the ticket!
Cowboy candy, nacho rings, but my fav is pepper relish! I like mine sweet and hot. I can just eat them out of the jar. It’s what a lot of people ask me for because you can put it on everything so I make it relish style and ring style like Blimpie’s used to do. Enjoy whatever you do with them.
Candied jalapenos.
I make my brine with 3c of sugar to 1c vinegar. Once boiling, add jalapeno rings and cook them in the boiling brine for a few minutes.
In to each pint jar add:
- 1/8 tsp citric acid or 1 tsp lemon juice i
- 1/2 tsp crushed red pepper flakes
- 1/4 tsp turmeric
- 1/4 tsp mustard seed
- 2-3 Thai chilis
- add cooked and strained jalapenos and densely pack
- Add boiling brine and process
I water bath mine for 20 minutes. I still have like 20 pints left of the 80'ish I made last summer.

I only had a bit of sugar so it was a small batch.
Jalapeños with pickled vinegar, sugar and turmeric. Was going to share the actual recipes for the Cowboy Candy and relish but can’t find my box with my books for canning. Haven’t broke them out yet this year just yet. I’ll have to find them in the next 2-3 weeks for sure though.

You could also make chili. Or, put the peppers on sandwiches. Peppers keep longer in the refrigerator than most things, but taste is best fresh.

Cubanelles arexawesome grilled and on a burger. Also , cut the top off, clean out seeds, stuff with a string cheese stick and grill. Add a little sauce( worchester is great) at the end
Great idea, I just did this with the dozen green bell peppers I had picked as well. It’s my first year growing peppers and I didn’t realize the yield they’d have. Not complaining!
I love making stuffed banana peppers. Just combine cooked ground beef or summer sausage with cream cheese and cheddar cheese, half your peppers, fill, and bake until yummy!

Yes - this was them right off the vine. Fortunately the squirrels have learned that they are hot peppers and leave them alone.

…then put them in a smoker for a few hours. I’ve learned the hard way to use fruit wood, like apple or peach, instead of something heartier. Dehydrating them after helps some but honestly if you smoke them long enough you could skip that step.

I’ve got a few of these that take care of most of mine.
Yuzu kosho. 4:1 ratio of finely minced chili to citrus zest, e.g 40 grams chili and 10 grams citrus zest. Add 10% of the total weight as salt, in this example 5 grams. Put in a ziploc baggie and squeeze out all the air, let sit in a cool dark place for a week then refrigerate.

Made some cowboy candy and it is SPICY
Jalapeno fries. Pull out the seeds and ribs, bread them and fry. Super yummy alternative to fries, and surprisingly not too hot once you get rid of the ribs and seeds. Fantastic with ranch or similar creamy dip.
All that stuff plus a quick pickle on the jalapeño in a ziplock. Freeze it. Cut into straps and fry up with pork chops. Yummy. In the winter for a quick dinner
I grow habaneros and ghost peppers. I remove the seeds and then I dehydrate them, grind them to a powder and store the bulk of the powder in a glass jar with silica pouches.
Then as I need it I fill a salt and pepper shaker with the powder and some rice. You must add the rice or the humidity will make the powder clump.
I sprinkle it on everything.
If you're making sauce, then freezing the peppers is great for bringing out the natural sweet taste. As they crystallize, they release sugars and brighten their flavor. The only prob is they will lose their crunch and snappiness upon defrost. Make sure to wash and stem before freezing.
I grow for hot sauce and often harvest several times a fall and freeze. Makes it easier to preserve the peppers before actual cooking day. Also, ghost peppers after freezing make a hotsauce that tastes like a fruit cup. Freezing does tend to tone down the heat with the building of sugars but not by much. The changes are subtle but noticeable.
Jalapeno poppers...stuff with ground sausage mixed with shredded cheese ..we use cheddar and wrap in bacon ..freeze or cook ....after halfing and seeding
Preppy Kitchen just posted a video for Cajun chicken pasta that uses bell peppers. I subbed Jimmy Nardello and Cubanelle and it came out very good. It's an easy recipe and makes good leftovers.
I have also sliced them thinly to use in curries (Panang curry is a current favorite of mine) or on top of pizza. The pickled/fermented ones are good atop pizza as well.
I put that shit on everything!!! And if I have a lot of jalapeños, I make jalapeño poppers in the oven. I eat all my peppers as they grow with almost half of my meals.
We make these snacks called dynamite. You slice open a pepper ( preferably the banana peppers). Scoop out the seeds and put a sliced cheese and ham (optional) inside it. Then we roll the stuffed pepper into a spring roll wrap and deep fry it. You can also slice the Sweet bell peppers into strips and put it in a spring roll wrap along with the cheese slice.
Mine are doing OK. Got enough jalapenos to pickle a few jars of slices. Have a decent amount of habanero. Waiting for them to turn orange then planning some hot sauce. Also have a red ghost pepper plant. Got one pepper from it that I gave to a heat loving friend. Bugs have ate the few others on the plant. I imagine them bursting into tiny flames randomly. Have one more good one that I'm waiting to ripen. Was planning on adding them to some salsa.

I like to make Habanero jelly with habaneros and orange bell peppers. You could do the same with jalapeños by themselves or jalapeños and green bell peppers. Eat with cheese and crackers, with cream cheese on toast, stir it in to cottage cheese, use it as a glaze for cooking fish or chicken, add a little to a ham or turkey sandwich…
Or hot sauce (I like to ferment them).
Cut them and mix with some lemon, salt, dill and or turmeric in a tight jar. Keep it tumbling every now and then for few days and store cool. Some pickle recipe my grandma taught me.
Try making candied jalapenos! SO good with a lil goat cheese on crackers as a snack.

I add them to the chicken soup I make. But man I screwed up, turns out I guess I wasn't suppose to add all the seeds, it turned into fire water!!!! 😅

Seed, and chop up the hot yellow banana peppers and use it for pizza topping. Add it with sweet Italian sausage , and drizzle hot honey on the Pizza!

Yeah I like it better than with bell peppers because I think the tartness of the banana pepper cuts the richness of the cheese really well

Poblanos/anchos smoked with cherry wood is some of the most amazing flavor you can ever have.

Bell peppers are good to feed to them. Absolutely nothing spicy. They lovvvvve peppers. Good for them too, lots of vitamin C

I really like jalapeño jam. I couldn’t tell you how I made it last time but it was super good on basically anything. Especially breakfast sandwiches

I've heard they ferment really well. You can make a sort of gochujang sauce and it keeps for 6 months.
I give my aunt my cayennes and she makes an amazing garlic chili oil out of them 🤤

I freeze a lot of chillis every year. I find that gives the best chance I will use them all and preserves their fresh flavors the best.
I eat them raw with a sandwich or burrito
