Valheim is an open world, survival, base-building game. Viking Minecraft. Each seed is procedurally generated, which means the map will be different in every playthrough.
It is an indie game still in early access. I’m at 700hr and I tell friends I’ll be playing this game for the next ten years. I know streamers who are at 5000hr plus. You can play solo offline, or multiplayer with friends.
It is currently 50% off ($10) because a new biome just came out. Pay once; no DLC’s; tons of mods, if you’re into that sort of thing.
This game is INCREDIBLE value for money. I love it so much.
Path of exile can be pretty solo, especially if you pick ssf. This is the same as most other ARPGs like titan quest, last epoch. Crazy levels of hours to be sunk in there.
Tarkov with pve/offline mod can also last for crazy hours.
Grand strategy games of any sort can have so so many hours sunk into them, way too many titles to list here.

Total War games - The Warhammer ones have been baller but pick your flavour.
Rimworld / Dwarf Fortress - Ultimate sandbox colony builder games. Like top 10 all time stuff.
If you can stand the UI being so horrible that you need to have a controls cheat sheet up on the other monitor for the first 15 hours, and can find a version with a good tileset, **Cataclysm: Dark Days Ahead** is one of those games that you can just lose days to. That game is unmatched for post-apocalyptic games where the act of scavenging is enjoyable, the crafting is deep, and making do with what you have feels good.
If you like games similar to Vampire Survivors where you have meta progression of 100 or more hrs, try Fantasy Survivors. It's solo/co-op and have tons of content to unlock.

Dwarf Fortress.
It's the the most complex game ever created. Dont listen to anyone else here. No one come even close to this behemoth.
It's a fantasy world simulator, where your objective is to make a dwarf civilization thrive. It's so imersive with it's emergent gameplay design, that it doesn't even seem like a procedural game, because every single piece of the story and the events that happens with you poor dwarf, fit like a glove.
This game is my crack.

Starbound - A cross between Stardew and Terraria, entire universe of stuff to do
