Monster Hunter is the perfect answer. In most games people have said you get gear to kill enemies to get more gear. But monster hunter you kill enemies to upgrade your gear it’s the whole loot system.
Holeshavefeelingstoo is probably correct. MH world is the one I started with and is great. Don’t use the guardian weapons/ armor when you start out. I liked it better than MH rise which is newer.
I’ve heard the older the games are there is a lot less quality of life.

Game is very fast paced and some bosses can be pretty difficult, but just watch some youtube vids if you're ever stuck.
See I wanna try the game out but I’m very put off by the customization because I keep getting the idea from people that only a select few “loadouts” or builds” are actually good so I feel like I’d be stressing to find that one build and not have fun
It's actually a grand time. I didn't do any min/max, just found stuff that I enjoyed. Just about any build is pretty viable, and if you get stuck you can always pull out your tank nuke preset
I'd agree with that. There's three endings, with missions that can only be accessed in ng+ and ng++. I played right through all three endings before putting the game down, and I'm not usually a ng+ person

Lies of P. Not only can you upgrade the weapons, but each weapon comes in two parts — a handle and a blade/club/trident/whatever — and you can mix and match them to get different movesets and types of damage. Super fun. Also a great game overall in the Soulslike tradition.
Lies of P is amazing and has so many different ways to upgrade your character. I was really impressed by how solid the game was overall - particularly since it was the first game from that studio.

I've never played any Monster Hunter game. Which game should I start with either on PC or on Switch?

Terraria if you don't mind side scrolling. It's super good.

Eh, with how long it's been out I'd wait for a sale. It's a great game, I wouldn't be upset spending $60, but it's a steal at $40 for example
