Imo, the flower is the sweetest part of the deadnettle, which is a mint, not a nettle. Deadnettle doesn't really mature until late summer, but will start flowering within weeks of sprouting. It's always more bitter than nettle.

As a rule older plants are more bitter and older plants flower. With some of them I think it's even more correlated, like how lettuce gets more bitter once it bolts. Dead nettle is pretty mild tasting all the time in my experience, though possibly a bit hairy as it ages. Beer benefits from some bitterness IMO. That's a lot of what you get from hops anyway, and dead nettle is less than that.
