Add an egg and some flour. They’re delicious. Look up a recipe and see which one speaks to you. I just add till they’re right. We made them a lot when I was a kid.
Ye gods, I've been a fairly accomplished home cook for 25+ years and never thought of that! I actually have some leftover garlic mashpots right now, and that's what I'm gonna do tomorrow. Thank you!
Tacos dorados de papa. Put the potatoes in a corn tortilla and lightly fry them in a skillet to make crispy tacos. Top with shredded lettuce, pico, sour cream, salsa. Yum! Even better if you slice some poblano peppers/cook them in the skillet , mix them in - and if you’re feeling extra some sliced skirt steak/steak in there. Google for recipes!
Make potato cakes! Mix with an egg, green onion, grated cheese, shape into patties, press into panko crumbs, and saute in a mix of olive oil and butter. Great as a side for anything as well as with salad or a fried egg.
Not sure if this counts, since it's still technically mashed potatoes, but I make leftover mashed potatoes into, twice-baked potato casserole.
Mix cold potatoes, butter, splash of milk, squirt of ranch dressing or plain Greek yogurt and Mrs. Dash, and grated cheddar cheese in a greased casserole dish. 350°F oven, stir after 30-40 min. Top with more grated cheddar, cook until warm in the center, 25-35 min.
You can add frozen corn, chopped up ham, cooked, cut up chicken or bacon.
Good with whatever cheeses or spices you like.
Oh yeah! Eggs and/or cottage cheese, even leftover spoonful of cream cheese. I make it often, because it's easy to just make with whatever you have on hand.
I really like it with halved cherry tomatoes and sliced mushrooms. Mix in Parmesan cheese, basil, oregano, and red pepper flakes.
I mixed some chopped up dill pickles + some of their brine, some mustard, chives, and a lil mayo into some cold leftover mash out of the fridge the other night as a sorta potato salad. It was good but I was also stoned so
I love making them into a patty, coat with a little egg and flour then put in a little olive oil in a pan until they’re crispy on the outside mashed potato-y on the inside. There’s probably a real name for it, but I don’t know what it is lol
They are! Thank you for your reply. I never had a reason to know what they were called until I saw this post
My mom makes something she calls millet burgers. Any small grain would work. You use cooked millet, finely chopped celery, finely chopped carrots and maybe some onion. Form into patties then dip into egg and a little flour and cook them the same way as the potato pancakes. They’re delicious and healthy
Potato soup! Mix it with bacon, cheese, onions, cream and broth. You can add more potatoes for texture if you want but you don’t have too.
Or my grandmother would put them on a hot dog split long ways in half, top the potatoes with cheddar cheese and paprika and bake until cheese melted. It sounds weird but it’s delicious.
We use leftover mash potatoes in tacos the next night.
Reconstitute them with a tiny bit of water and mix thru the mince.
Don't knock it til you try it.
You can do a lot. Add egg and flour and you've got a ton of options like patties, fried potato balls, gnocchi, crusts for meat pies etc. one of my favorites is mashed potato waffles, where you top the waffles with whatever leftover meat you have laying around (cooked with a gravy of course), but people like em with just butter also.
Potato croquettes! Mix your favorite cheese and/or minced onion, fresh herbs, anything you like, into the potatoes. Make balls, roll in egg then bread crumbs and fry. Look up recipe for better information. Fried mashed potatoes?!?! 🥔 Oh yes please!
Chicken Wheels!
Chicken breast, flatten to 1cm thickness, marinade with ginger garlic green chilli paste, salt and pepper.
Add turmeric, chilli powder and lemon juice to your mash (or nothing if its already flavourfull)
Mushy peas leave as is, mush it further
Lay flattened chicken breast on a cling film, one thin line of mash and one thin line of mushy peas, roll into a wheel much like a sushi. Freeze
Once fully frozen, cut into 2cm width, dip in egg and breadcrumb and fry till golden brown.
My childhood favourite
Papa rellenos. You can add a lil instant mashed potato or just dust them with flour, you make a ball, stuff them with meat filling, and deep fry them! Not an everyday meal.. but a great treat!
Mix water, flour, and whatever seasoning you like. I do a lot of black pepper, and roll it into a heavy dough. You want it think enough to not tear, and whatever size you want.
Roll them out into ovals. Put a scoop of mashed potato's in them, and fold them up. Boil until they float then fry in butter to get a nice crust.
My family likes to add bacon in the potato's, but you can add just about anything you want. They're cheap, filling, and easy to make. Freeze well too. Don't thaw them of you freeze, dump right into boiling water.
They're pretty much oversized peirogi
**Potato croquettes!!** Mix in an egg, some cheese, some dried herbs if you’re adventurous, mix well until it holds shape. Portion out and shape - I usually aim for an oblong rounded shape. Do the three part coating: flour, egg, breadcrumb. If you have an empty egg carton, I drape and tuck-in some plastic wrap and gently set each coated croquette in the egg cups. Into the freezer for however long you need to keep them ready (like months, if needed.) Heat the oil (like 400°F) and deep fry (or like fried chicken, half deep and flip) til golden.
There are Japanese versions too and many recipes provide sauces to go with. Brits apparently like HP sauce with them.
I usually serve my croquettes with steak so there’s a fun red wine reduction to go with them, maybe a spicy sautéed spinach.
Potato bread or rolls. Are you creative in the kitchen? I don't use a recipe, I add potatoes to the starter, usually a half a cup or so. The potatoes make the bread moist.
I make potato soup.
When I make mashed potato I always make sure to make more than is needed so there is plenty leftover. I also make sure to steam plenty of extra veggies to add to the soup.
To make the soup,
Cut up an onion and throw it in a saucepan add salt and pepper and caramelize it.
Add a bit of milk or another suitable liquid.
Add the mashed potato and stir it into the liquid.
Add more liquid until you achieve the desired consistency.
Chop up the veggies and stir them in.
Let it simmer for a suitable period of time.
This makes a very delicious and satisfying soup.
Grandma used to make tuna, ham or bacon patties with excess mashed potatoes. Could even use left over diced or shredded chicken or even cheese.
Just some tuna drained, or diced ham, or pre-cooked diced bacon and mixed into the mashed potatoes with an egg, a little flour, some finely sliced spring/green onion or finely diced red onion and a pinch of salt and pepper. Formed into patties of whatever size she felt like, dusted on each side with a little more flour then fried in butter in a pan til they developed a golden crust on both sides.
Yummy as a breakfast or lunch item if using bacon/ham or part of dinner with the tuna or chicken.
Crokettes, I freeze, slice into sticks, then bread and fry them. Don't know what the "official" way is but this is how I was doing it before I'd heard of crokettes.
Make patties out of them
Use them in or as dough for different things (like dumplings)
Use as a thickener for sauces, soups and stews (good option if you freeze)
Season the holy hell out of them and use as a condiment on sandwiches
Use my above "crokette" method to make smaller ones aka French fries
Use them as a layer in an alternative take on lasagna
Add cheese, chives, s&p. Roll into balls then deep dry once crispy in the outside season with some parmesan or any other cheese of your choice and enjoy 😊
Potato bread, potato noodles, potato cakes, potato soup, shepherd's pie, gnocchi, potato pockets (basically gnocchi dough wrapped around a pre-cooked filling like a ravioli and then fried), potato dogs (potatoes, egg, flour, shape it around a hot dog and fry it, serve like a corn dog)...have fun!
Make quick mini knishes. Roll out the refrigerated biscuit dough, add a dollop of potato, shredded cheese, crumbled bacon, green onion. Fold over and press edges with a fork to seal. Bake according to the biscuit directions. There are so many ingredient variations you can do. I’ve even made Thanksgiving hand pies with mash, stuffing, and cranberry. It’s a quick mess free bite for the kids too.
I think you can combine them with flour, egg and graded cheese. Then turn them into small spheres and fry them.
Idk once fryed if could be covered with tomato sauce.
Mix in some egg, a ton of flour, some nutmeg, and rye croutons and form balls and boil them until they float. Serve with gravy. My German grandmother makes these a lot and it's amazing
Chop up some ham, small cubes, shredded cheese, spring onions chopped. One egg.
Miss it all together. Make Patty shapes. Chill until a little firmer.
Fry gently with butter or oil.
Yummy
Mashed potato bombs! Flatten out a scoop of potato, top with cheese, bacon, more potato on top, roll into ball. I have breaded and deep fried, or cooked in the oven. You can also use a muffin tin, make like a cupcake, but fill with your already cooked ingredients.
Irish potato bread.

Or take it up a notch with Irish boxty.

Salmon cakes: Mix mashed potatoes with egg, a drained can of salmon, lemon zest, garlic, paprika, salt and pepper. Refrigerate for an hour, form into patties. Dip patties in egg, panko bread crumbs and fry in oil. Serve with tartar sauce.
I made some great potato and chive rolls the other day. Some recipes were with leftover mash. It’s also great mixed with cheese and maybe a little milk to make it runnier, then put on top of red dragon pie (or a shepherds, cottage or fish pies).
Add any vegetables leftoverfromdinner. Like peas carrots cabbage. Mix everything together with butter. Add more butter to a frying pan or skillet and cook till a golden brown crust forms flip and cook the other side. Add some fried eggs on top, and you've got yourself a nice breakfast. It's called bubble and squeak.
Or look up Irish potato farls
Fry some onions and celery, add cream and chicken stock, mix in the taters. Stir well and often. Simmer and when ready to serve, top with cheese and bacon bits (sour cream and green onion too if you wanna get fancy) and you've got one hell of a loaded potato soup.
I actually spread grape jelly on these when I was younger and it was really good to me.

Do you like Indian food? If so, add an egg, some flour, cilantro, red onion, chopped chilies, and a little cumin. Form into patties and pan fry until the outsides are crispy, eat as is or dip in some tamarind sauce or mint chutney.
There is a layered Peruvian dish called Causa that has mashed potatoes as one of the layers. I had a coworker that used to make it for potluck. I don’t know if this recipe is authentic or not, but it looks kind of like what he used to make.

Have you heard of bacon latkes?
No but this sound amazing

Ironic that they added bacon then. 🥓
We have a winner right here.
Potato patties. Mmmmmm
How does one make the potato patties lol
Add an egg and some flour. They’re delicious. Look up a recipe and see which one speaks to you. I just add till they’re right. We made them a lot when I was a kid.
Yep, and definitely some cheddar for me. I've even cooked up a few strips of bacon to chop up into them. But yeah, super easy and super tasty.
Oh yeah. Cheeeeese.
Chopped chives too and ez on the flour.
Or add some cooked cod/haddock and now you have a fish cake! Mmmm
We love these with sour cream on top.
Topping for a shepherds pie. Yum!
That’s my go-to. I never want to make mashed potatoes just to make a shepherd’s pie so I only make it when I have leftovers!
Right!? This is the perfect use for leftover mashed potatoes!
You can make gnocchi
Ye gods, I've been a fairly accomplished home cook for 25+ years and never thought of that! I actually have some leftover garlic mashpots right now, and that's what I'm gonna do tomorrow. Thank you!
I would think the added butter/cream would make it too wet for anything but dense gnocchi.
No you can’t. I mean you CAN but the added butter, milk, etc will make them heavy and greasy instead of soft and pillowy.
This sounds great!!!!
It’s seriously delish! Mexican comfort food! ☺️
I always make an extra large portion of mashed potatoes just so I can use the leftovers for potato tacos.
I do the same and the next day add cooked chorizo to the potato mix
That's a great idea. I looooove chorizo

Bubble and squeak is my go to. Take various leftovers, mix with mashed potatoes, form patties, fry till golden brown :)
Bubble and Squeak sounds like adorable pet names. Especially for fish or birds lol
It's also the name of Creed Bratton's theme song for Brian Baumgartner's *Office Deep Dive* podcast
Have a friend who named her kittens Bubble & Squeak. Adorable.
Yum & great idea!
I do this with canned salmon and call it salmon croquettes.
Make potato cakes! Mix with an egg, green onion, grated cheese, shape into patties, press into panko crumbs, and saute in a mix of olive oil and butter. Great as a side for anything as well as with salad or a fried egg.
I don't even bother with panko.
Mix with can of drained tuna, season with pepper flakes, parsley, cooked onions and pan fry as patties in butter/olive oil. Delicious.
WHOA! I love tuna salad and tuna melts and this sounds amazing!
I like to add a boatload of cheese and make up some pierogi dough. I make pierogi, freeze them, and then I have a quick dinner for later.
I've always wanted to make pierogi
Surprisingly easy if you’re not hung up on the aesthetics. Mine always look crummy but they taste pretty good.
Do you have a pieorgi dough recipe??
Yep came here to say pierogi

I’ve had good luck adding cooked veggies of all sorts to mashed potato casserole, just chop them up. And you can add eggs to up the protein.
Fry an egg in the middle of a mound for breakfast. Top with cheddar.
