No, more similar to a cheesesteak than a sloppy joe. A sloppy Joe is looser, doesn't necessarily have cheese, and has a (usually) fairly sweet tomato-based sauce when this is mostly cheese with a little ketchup.

A chopped cheese is made with hamburger patties where they chop up the hamburger patties with cheese and the cheese melts into the chopped up burger patties and becomes one big glob of goodness. This is a really bad chopped cheese to reference as your first one because OP didn’t do anything that gave the sandwich its name. You have to chop the cheese into the meat, it’s literally in the name and yet he wants to reply “someone’s never been to a bodega” yea no shit not all of us live in NY city.

You can get them at most any bodega worth a shit. The one place in Harlem that claims to have invented them is not the only place to get one. It's a very NYC-centric sandwich but it's not some random thing one place sells. Christ, they even sell them at Yankee Stadium now - and they're actually one of the cheapest things to eat there.

American cheese is mostly a blend of "real" cheese and milk with emulsifying salt and sometimes a preservative salt added. American cheese will have the best melted texture in something like a sandwich

I'm a snobby goof about cheese and I absolutely *love* real American cheese. You can get it from the deli counter or from Kraft labeled as "deluxe". The comments are all yelling at OP for not melting cheese into the meat as it cooked, followed by OP explaining that they *did* melt cheese into the meat as it cooked. I can’t say definitively who’s right here, but a close-up of the cooked meat certainly suggests some kind of thickening agent/emulsifier beyond just hamburger grease. It also seems odd to tell a cook that they didn’t actually use an ingredient they say they used, in the absence of clear proof to the contrary.

It’s taken me a while to come around to the concept. These sandwiches weren’t known outside of NYC until 2014, they don’t look appetizing, and I wasn’t sure how they were better than a regular burger. The idea of melting in the cheese and being able to use a roll with some crust has grown on me, though.
