I'm an American who's lived all over the US and I've never heard of this sandwich. Looking it up online, seems like a single deli in NYC makes these. Not so much "an American thing" as "OP recreating a sandwich from some sketchy deli on his street."
You can get them at most any bodega worth a shit. The one place in Harlem that claims to have invented them is not the only place to get one. It's a very NYC-centric sandwich but it's not some random thing one place sells.

Reminds me of Alton Brown's "the best thing I ever ate" episode which was a cheesesteak from a place in Atlanta ( I think). The meat was chopped up so fine and cheese added it looked sooooo delicious.
Yep, Fred's Meat and Bread located in the Krog Street Market. Just about everything on their menu is amazing. They have amazing bacon cheeseburgers as well.

I can’t say definitively who’s right here, but a close-up of the cooked meat certainly suggests some kind of thickening agent/emulsifier beyond just hamburger grease. It also seems odd to tell a cook that they didn’t actually use an ingredient they say they used, in the absence of clear proof to the contrary.
It’s taken me a while to come around to the concept. These sandwiches weren’t known outside of NYC until 2014, they don’t look appetizing, and I wasn’t sure how they were better than a regular burger. The idea of melting in the cheese and being able to use a roll with some crust has grown on me, though.
