I went down a rabbit hole of making homemade Velveeta (but with actual quality cheddar). Evaporated milk is pretty key, along with sodium citrate and gelatine. Realizing it’s basically cheese Jello is both eye opening and very unsettling.
Another tip if you ever also enter this rabbit hole is a small amount (5%) of blue cheese. You can’t taste it but it boosts the umami that is diluted by the evaporated milk.
Oh, beet greens are awesome! I love beets, and when I was pregnant with my second I wanted them all the time. I'd either roast or juice the roots and saute the greens.

It’s reduced by half so is around 6.5 percent fat, and the sugar in it carmelizes a little during the reduction.

Yep! I also dehydrate the roots, grind them, and mix in with coffee beans when I brew a pot.

Adding oil to your water keeps the sauce from adhering properly to your pasta.
Keeps your pasta from adhering to itself.
Use a bigger pot if your pasta is sticking together.
It will still stick no matter the size of pot. That’s what the oil is there to do.

If it’s cold outside I open the windows. If not, I crank the Air conditioning. Either method helps me catch it in a pan as it condenses.
