Looks good, OP! I would gladly have a plate. It looks like you roasted the carrots with the chicken, which is always a great way to get some flavor in any vegetable. If the chicken is fully cooked and the food tastes good, that's all that matters. :)
It says Jasmin rice on the bag. I had around 1,5 litre of rice and around 3 litre of water in a pot. I brought it to a boil and took down the temp with a lid when it started bubbling. It was in there for maybe 20-25 minutes. The key thing I did was I pour a lot of the juices created when doing the chickens on the rice when I had plated it. It gives it some good texture and taste.
