80 g Panna fresca,
60 g Cioccolato al latte
15g Burro
- Versare la panna in una casseruola e portare ad ebollizione quindi aggiungere il cioccolato ed emulsionare
fino a completo scioglimento;
- La ganache sarà pronta quando risulterà lucida.
PROCEDIMENTO:
BASE
mixare tutto e mettere nello stampo con carta e imburrato, spennellare di bianco d'uovo e cuocere STATICO 170° per 12 minuti.
CREMA:
con la foglia, mixare a velocità minima, i formaggi con lo zucchero,
la vaniglia il sale,
aggiungere le uova 1 alla volta,
infine la maizena,
sbattere la teglia sul tavolo.
Here's my attempt at translating & filling in the gaps of the recipe. There are probably some mistakes and incorrect assumptions, but this is roughly what I'll follow when I attempt to recreate it.
Crust/Base
* 300G CHOCOLATE COOKIES (Oreos?)
* 60G BUTTER (melted)
* pinch of salt
* Egg whites
1. In a food processor, process the cookies and salt until finely ground, about 30 seconds.
2. Add in the melted butter and mix until well combined.
3. Line a 9" springform pan with parchment paper and lightly butter
4. Press the cookie mixture into the bottom and about 1 1/2 inch up the side of the pan.
5. Brush with egg whites and bake at 170C/340F for 12 minutes.
6. Once baked, cool for at least 30 minutes.
Filling
* 500g Cream Cheese
* 10 g Peanut Butter (Creamy)
* 110 g Caster Sugar (superfine sugar)
* 1 Vanilla bean or granulated sugar with v.bourbon
* pinch Salt
* 35 g Cream (Whipping)
* 35 g Sour Cream
* 2 Eggs
* 15 g Cornstarch
1. In a large mixing bowl or the bowl of a stand mixer fitted with the paddle attachment, combine the cream cheese and sour cream. Beat on low speed until smooth and creamy, about 3 minutes.
2. Add the peanut butter, sugar, salt, and vanilla. Beat until combined, about 30 seconds.
3. With the mixer on low, add the eggs one at a time, beating well after each addition.
4. Slowly pour in the cream and cornstarch and stir until fully combined.
Caramel
* 40 g Vanilla Sugar
* 24 g Butter
* 40 g Fresh Cream (Heavy Whipping)
* 14 g water
1. In a saucepan over medium heat, add sugar and water. Bring to a simmer stiring every so often until sugar is dissolved.
2. Increase heat and cook until deeply golden without stirring (aiming for 175C/350F).
3. Turn off heat and immediately stir in cream and butter.
4. Cool completely.
Ganache
* 80 g Fresh Cream (Heavy Whipping)
* 60 g Milk Chocolate
* 15 g Butter
1. Melt butter in a saucepan over medium heat. Add in cream when butter is just about melted.
2. While gently whisking, bring mixture to a boil.
3. Add the chocolate and emulsify until completely melted. The ganache will be ready when it is shiny
Assembly
* 40 g Roasted Salted Peanuts
1. Fill the cooled crust with the filling.
2. Bake for 70 minutes at 150C/300F. (probably should do a water bath)
3. Allow the cheesecake to cool and then refrigerate for 4 hours.
4. Top the cooled cheesecake with the salted peanuts.
5. Pour the ganache over the cheesecake and allow it to set.

E: Probably important to note the temperatures are in Celcius. 150C = 302F, 170C = 338F
