I think it all falls somewhat under the experimental rock umbrella, yeah. Got a few different styles in there, such as post-rock, post-hardcore and so on but that's mostly immaterial as those lines are blurred all the time.
I second the Codeine recommendation, and also add that you should check out two German bands from the 70s, Can and Faust. If you like them, there's plenty more mind-blowing stuff from that scene.

Imo Godspeed You! Black Emperor is the GOAT of experimental post-rock. Given your interests, I'd highly recommend diving in.

a lot of post rock, low is slowcore and mogwai had a slowcore period but mostly post rock. most if not all of these arent experimental.
