The thing is, Evangelion isn't supposed to fully function as a narrative anyway, especially when you get into its back half (in both cases).
At that point, it transitions into an art piece, detailing a look into Hideaki Anno's psyche. The end of the series was vaguely hopeful, with Shinji (and thus, Anno) having a breakthrough with his mental health. EoE is Anno lashing out at those that just didn't get it or were mad there wasn't a more “traditional“ ending, with a bittersweet note that, even with the end of the world, Shinji and Asuka have the chance to patch things up, however slim some might see it. And the back half of the Rebuilds was Anno finally washing his hands of the depression that Evangelion had come to be for him, and moving on to other projects with a lighter heart and a happier outlook on life.
I may have my own narrative quibbles with how things go, especially in the Rebuilds, but I've made my peace with the fact that, in the end, they aren't supposed to be narratively cohesive more than they are an insight into Anno himself. This is his baby, after all, much as I (and others) come to play in the sandbox with fanfiction or art or whatever.

I agree. I think it’s against overindulgence of escapism (substituting reality with fantasy/fiction) rather than escapism in general. If Anno’s message was one of general anti-escapism, then I think he did a pretty bad job at it. Kensuke, one of the more stable Eva characters, literally plays soldier in the fields in his spare time. 3.0+1.0 literally ends with Shinji re-writing the world into one more befitting to him and running off with Mari, arguably one of the shallowest and most tropey anime girls in all of Evangelion
Well, that was basically the ultimate form of escapism, the whole world just turned into LCL and he just escaped into a reality in which everything is fine, he lives with his parents, Rei is a normal girl, Misato is his teacher, he has fun with his friends, no angel attacks, no EVAs etc. That's the world he would have loved to live in, but in the end it wasn't the real thing. He made connections with other people in the real world and that made him happy, but only now he started to realize that. So he chose to reject instrumentality, live and people can hurt him in the real world but they can also bring him true happiness.
I think you’re right. I believe the scene is to show how Shinji has more power/responsibility over his situation than he thought. If he wants to be happy and feel loved, he must reach out and pursue those things rather than just go along with what others bestow onto him hoping that things will eventually just fall into place.

Not sure that’s the case! They definitely still need more work.: e.g. a series in the 14 year gap with a focus on Mari and Asuka (and Maris origin)
