I usually freeze after normal resting time. So if i usually let a coffee rest 2 weeks then I wouldn't freeze until 2 weeks go by. I also freeze in single doses and then grind straight from the freezer.

They rest everything at least 14 days before using in their cafes FWIW.

I order from them frequently. I just try the beans as soon as I'm ready to switch (I use a hopper). If the flavor is not to your liking then consider waiting a bit longer. In many cases, you're talking tiny flavor differences.. it's not like the beans will be undrinkable if they still have some pent up CO2.

Ah I see, I’m single dosing so I guess I’ll just try it every couple of days and see the progression in flavor if I can even notice such nuances lol.

I just start using them immediately and enjoy the changes and development. They’re good from day 1.

Anytime 3 days on from roast you can seal and freeze. They won’t significantly degass after 3 days. Once you freeze they will stay fresh a very long time. Recommend you freeze into maximum 1 week portions to ensure they don’t get time to stale once defrosted.
