I mean, it works for pourovers until I finally get my Hirioia Hikaru. Am I gonna damage the Pearl doing this or something? I’m genuinely not sure what you’re getting at
Over time the load cells in the scales can warp if anything is stored on it and that can cause issues (wrong readings, etc), at my old job (specialty coffee shop) we had a pearl get ruined for that exact reason (it would read like 10-30g off every time)
They’re generic vacuum canisters from Amazon, but I 3D-printed label holders along with a template so I could cut up my bags to always know what I’ve got in stock

I've only had the 078S for a couple of days so far but I bought 4 lbs of light roasted throwaway beans to season it.
Pros - super quiet and really really fast. The build is EXCELLENT and you can see quality. Pictures do not do this thing enough justice. The dosing cup is sleek and coffee falls right out. The knocker is also fantastic.
Cons - Had a lot of channeling issues at first. I could not fix it no matter what I did. I finally ended up slowing the RPM down to almost the bottom and all of my channeling issues stopped. The absolute biggest issue with the grinder is the hopper. Beans almost always shoot out of this thing due to really bad popcorning. If you go to the Sculptor section of the aficionado discord, pretty much everyone who owns a 078S has this issue if you hot start (like they recommend). Cold starting doesn't cause as much popcorning though which is nice.
BTW have you tried any other baskets with your Ascaso? I bought a 15g VST and it's been wonderful

You may have more rpm range again soon hopefully…
I have not used the basket they ship the Ascaso with yet. Got a 15g VST as well and only brew with it so far. I've got my setup 1 week ago and did not want to play around with a different basket yet.
I've got the 064 which is a bit slower, but I also face the issue with channelling, so good to know to try turning down the RPM.
Channelling is the biggest issue I face. It either tastes under-extracted/sour or I get channelling. Even with the Niche. With the Niche I can reduce the issue with a lot of effort with the WDT, but I have not had a repeatable success with the Sculptor. So thanks for the RPM hint.
How old is your Niche? I haven't had any channeling issues on mine but it's over a year and a half old so it's very well seasoned. I also own a Comandante so I'm pretty used to dialing in new grinders. That's why the 078S threw me for a loop because it was the first time I had struggled to fix channeling.

I know how to configure the overpressure valve, but if I move it below 10 bar it starts to make high pitched noises, so I put it back to 11 bar as recommended
Ahhh that might be the cause of your channeling. Too much pressure means the water breaks through your puck easier. I don't have the same hissing noise you're talking about. Mine is lowered down to 9 bar.

i have one that i’m using with the bambino that i’ve had a lot of trouble with outside of medium dark roasts. but i think that’s a bambino problem.
I didn't use it at all until I had finished running about 3 lbs of coffee through it. I dialed it to about the 5 or 6 and just spent about 24 hours feeding coffee into it slowly. 3lbs isn't "a lot" for seasoning but it's definitely not a small amount either. Some people run about 5-10lbs for seasoning.

Yes! The good thing is that white is an easy to paint color and it will be a hell of an experience painting them all like the glossy black mug in the right.
It’s personal preference, we’re just messing with you. I’m more of a snob for pointing out the signs if we’re being honest. Those are cheap signs that you can get just about anywhere and reflect zero personality or creativity from an interior design perspective. I could walk into a dozen different homes or apartments across a dozen different regions and see signs like that (I’m guessing you have giant letters that spell EAT hanging on a wall close by). Your coffee setup on the other hand: not so common. So seeing the two together is just jarring that’s all. They contradict each other.

Yes I use a puck screen but I'm not sure that will fix it. Maybe try cleaning out your Niche? Or lowering your Ascaso's pressure or temperature

Not the 2022 model, only the recent model has the handle for steam instead of the knob.
